Today let’s talk quinoa (keen-wah)!! Quinoa is a grain that contains every amino acid and is rich in lysine which helps with healthy tissue growth throughout the body! To prepare quinoa you need to rinse it first, it can be a bit bitter and rinsing helps. Then cook it in salted water. The ratio is 1:2. So like 1 cup of quinoa to 2 cups water (or 3 cups quinoa to 6 cups water…). Cooking it in broth instead of water adds extra flavor. Cover and boil til the liquid is absorbed and the quinoa is tender, let it stand for about 5 minutes. Remove the lid and then fluff with a fork! Ok, now let’s get to some recipes!!

Cilantro Lime Quinoa!!
2 cups vegetable broth
1 cup quinoa, rinsed and drained
1 clove of minced garlic
2 Tb fresh lime juice
1/3 cup chopped cilantro
1/4 tsp sugar
Cook quinoa in the broth. Stir in garlic, lime juice, cilantro, and sugar. Enjoy!

Quinoa Fruit Salad!! 
Pick any fruit you want…your favorites!! For mind I’d have strawberries, blackberries, mangoes, kiwi, and pineapple-about 1 cup of each. Combine fruit with 1 cup (measured uncooked) quinoa. Make a honey lime glaze with about 1/4 cup honey and 2 Tb lime juice. Mix the honey and lime juice well and pour it over your fruit and quinoa!!
