I love chia seeds!! I put them in and on a variety of things, but I have never made chia seed pudding. So I thought I would try and share a few recipes today!! But first, let’s talk about why those seeds are so amazing! I mean, besides growing on those cute little Chia Pets (yup, same seeds-ch ch ch chia!).

Chia seeds are an excellent source of fiber, omegas, potassium, and magnesium. They boost energy and endurance while improving digestion! They strengthen bones, help with weight loss, and deliver a lot of protein. They are packed with antioxidants and help lower risks of heart disease!! Pretty powerful little seed!!

So let’s get to the pudding!! Chia seeds have a natural ability to gel when exposed to moisture so these puddings are quite easy. The seeds do all the work!!

Orange Creamsicle Chia Seed Pudding!!
1 Cup Milk of choice
½ Cup freshly squeezed orange juice
Zest of 1 orange
2 Tbsp maple syrup or honey
¼ Cup Chia seeds

  1. Mix together milk, orange juice, orange zest and maple syrup.
  2. Add chia seeds and mix well.
  3. Pour into bowls or glasses and let sit 5-8 minutes.
  4. Stir again and refrigerate for 2 hours or overnight.
  5. Top with chopped pecans, coconut flakes, chopped cherries and oranges.
  6. Enjoy!

Blueberry Almond Chia Seed Pudding!!
1 c. almond milk (or any other preferred milk)
1/2 c. plain Greek yogurt
1/2 c. fresh or frozen blueberries
2 tbsp. chia seeds
2 tsp. honey (or any other preferred sweetener)
8-10 raw almonds, roughly chopped

  1. Using a 1-pint mason jar, or any other resealable container, add the milk, yogurt, blueberries, chia seeds and honey. Stir ingredients to incorporate. Place lid on container, and refrigerate for a few hours or overnight.
  2. Just before eating, chop almonds and add to the pudding.
  3. Refrigerate any leftovers.

Pomegranate Vanilla Cinnamon Chia Seed Pudding!!
6 tablespoons of chia seeds
2 cups of milk (dairy milk, almond milk, or whichever type of milk you prefer)
4 teaspoons of honey
2 teaspoons of pure vanilla extract
1 teaspoon of ground cinnamon
1 cup of fresh pomegranate seeds

1) In a large bowl, mix chia seeds, milk, honey, vanilla extract and ground cinnamon together. (Make sure to mix the chia seeds thoroughly so you don’t end up with chunky chia pudding.)
2) Let the mixture chill in the fridge overnight in the refridgerator
3) Divide chia pudding into two portions and serve topped with fresh pomegranate seeds

Chocolate Chia Seed Pudding!!
¼ cup cocoa powder
¼ cup + 2 tablespoons chia seeds
¼ cup + 2 tablespoons maple syrup
2 cups almond milk, unsweetened
pinch of sea salt

Place all ingredients in a medium size bowl and whisk until the cocoa powder has dissolved. Place in the refrigerator, covered, for around 6 hours or until the chia seeds turn jelly-like and the mixture thickens. Stir periodically.

Raspberry Chia Seed Pudding!! (pictured above)
1 cup of coconut milk (or almond milk)
1/2 cup of raspberries
1/4 cup of chia seeds

  1. combine the milk and fruit in the jar of a blender
  2. blend until smooth
  3. pour into a mason jar
  4. add the chia seeds
  5. close lid tightly, and give it a good shake
  6. refrigerate and allow to gel for at least 3 hours {I let mine sit overnight}

 

I made the raspberry one just this morning!! Super yummy!! My raspberries weren’t super sweet so I added some raw honey!! Give them a try and get those powerful little seeds in your body!!
